From the Bruffey Kitchen
Today I made these YUMMY cookies that I think are PERFECT for Christmas! Last year, I didn't do any baking. My little guy was just about 5 weeks old this time last year and with nursing and reflux and dairy intolerance (that we didn't discover for another week), well, we were walking life one moment at a time. This year, my son is sleeping, napping, playing, talking, signing, and laughing all the time! So, I wanted to bake for the holiday season!
I found this recipe here: Hot Chocolate Cookies
I modified it a bit in that I did NOT use marshmallows and only used one cup of mini dairy/nut free chocolate chips. But I didn't do any other substitutions. I plan to give some of these to neighbors, so kept all the ingredients according to the original recipe.
The dough was great and my melon ball tool was perfect to make the size cookies I wanted.
The cookies turned out delicious! They didn’t spread like they should and after some research (aka – talking to my sister who is a more experienced baker) I realized that I should have let the butter warm to room temperature from the freezer rather than using the microwave. They still taste awesome, but aren’t quite the texture I would want. I’ll have to make these again soon – SO perfect for Christmas!
The perfect Christmas cookie! Hot chocolate cookies with chocolate chips! Can it get any better? I submit that it cannot! (Brian Regan!)
